Eggplant Parmesan from allrecipes.com:

INGREDIENTS

* 3 eggplant, peeled and thinly sliced (I didn't bother peeling them...why?)
* 2 eggs, beaten
* 4 cups Italian seasoned bread crumbs
* 6 cups spaghetti sauce, divided (you probably don't need this much)
* 1 (16 ounce) package mozzarella cheese, shredded and divided
* 1/2 cup grated Parmesan cheese, divided
* 1/2 teaspoon dried basil

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
3. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
4. Bake in preheated oven for 35 minutes, or until golden brown.

Not enough ;) the boy is very well put together, and hilarious.

I wouldn't trade him for anything and his girlfriend is really lovely... I wonder how she puts up with him.

Although I admit, my libido is really perking up since I've come off the Trazadone. I mean... really.

I made some yummy potats the other night.
Nothing all that special - and certainly not by Cellar standards - but spesh for me just because I bothered to cook rather than just add water/ microwave/ unwrap.

Reviewing the photo. they look a little cold, and greasy. They weren't. They were hot and crispy and yum.

I think they look delish! Add a piece of poached fish and some steamed veggies and that is my idea of a perfect meal!

I can't believe I just ate two pieces of homemade scottish shortbread before breakfast, having just cancelled today's 2.5-hour gymathon and while thinking about the oatmeal I was going to make to fill me up and be healthy. My arteries are going to leave my body, turn round and strangle me ...I made the damn shortbread, I know just how much butter is in there.... :(

Bah, butter used in shortbread becomes benign, as do the sugar and flour. Even the salt becomes completely harmless in shortbread, my Grandma said so.

(and now I want hash browns and bacon too) Arg! I should go work out upstaris or something, but I was using the bonus free time to catch up on housework and paperwork.... )
