There may be a real rainbow salad, but I think I invented it
It's not really got all the rainbow in it - ROYGBIV - but it is calculated to please the eye as well as the mouth. I serve it in a glass bowl.
Shredded lettuce, red pepper, white cabbage, grated carrot, spring onion and pink onion. Pink onion? Yes! Soak chopped red onion in a mixture of lime juice and white wine vinegar. Not only does it turn it pink, but it takes away the blantant onioniness, so you can top your salad with huge whirls of it. Oh and chopped jalapenos. Dressed any way you fancy (low fat balsamic vinaigrette for my guests!)
My incense burner - for cones or sticks - has been with me years I'm afraid - probably from a market. But I admit I adore my candle holder. It throws a light even I am tempted to call divine.
