Chocolate Zucchini Cake
1/3 c butter
1-1/4 c sugar
2 eggs
1/2 c buttermilk
1/3 c applesauce
1 tsp. vanilla
1-1/4 c flour
1-1/2 tsp. baking powder
1tsp salt ( omitted )
1/4 tsp baking soda
2 c shredded zucchini
2 oz semi sweet chocolate melted ( I substituted coco powder with appropriate amounts of oil and sugar to make it sweet and oily)
confectioners sugar for sprinkling on top
bake 30-35 min @ 350
A new to me recipe and it tastes great although I actually prefer zucchini bread without chocolate.
