At the peak of the industrial revolution, NYC was being built in no small part out of granite that was brought down from the coast of Maine on ships. The water was fairly deep along the rocky coast of Maine, so the ships would get right up close to the rock outcroppings, and load up. There are still rusty iron rings and spikes driven into the rock that the ships would tie off to, and notches like these, carved into the granite to anchor temporary peirs and gangways in place.

Well it's all true, but that might not be what this picture shows. This rock isn't all covered in seaweed.

It's rock, but far from Maine and much older than NY.
What are they, what are they used for, how are they used.

I think they are holes for wedges used to mine slabs of limestone, marble and such.

Yes, they're holes chiseled in the rock by Egyptian stone cutters a long time ago, but what happens next?

Nope, wood. Fill with sun dried wood and add water, rinse-repeat, swelling wood will split the rock.

I watched a programme on TV last night which showed operations at a Canadian sandstone quarry.
Vertical holes were drilled in the rock and expanding mortar poured into them.
Within two or three days manageable sized chunks of rock just fell away.

I was thinking cutting once the stone was on site.

Saw a Discovery-type thingy where they showed it the Egyptians mighta/coulda done it that way (the sand and rope thing).
