My onetime manager, of blessed memory, was raised in Allentown PA and was plenty particular about his Philly cheese steaks.

He found happiness with The Great Central Steak & Hoagie Company, four or five locations in Ventura County CA. He thought the GCS&H in Santa Paula did it the best, and he'd always stop there on his sales rounds. Being as it's Ventura County, you can also get a tri-tip sandwich there. This marinated barbequed beef is a local specialty.
