I would need to ask my sister for specifics, but it's just salt, pepper, olive oil, and cayenne pepper (if you want it spicy). Then just bake to the desired crisp.

Call me a nutter if you like but when I'm making a fruit salad I add a bit garam masala or even standard curry powder.
as long as you don't overdo it and leave it to sit a couple of hours it takes on a lovely spiced flavour (like mulled wine) and doesn't taste "curry" at all. really good if you've got some ripe banana in there too. I commend it to the house. mind you I like tomatoes, sweet peppers and cucumber in my fruit salads as well (I'll get me coat,....) |

For you Buster. Recipe grabbed from Allrecipes.com:

Thanks. I looked at a few, one called for some millet flour. WTF. Wonder if frozen okra would work?

I googled it and found a blog where a woman roast frozen okra, no thawing necessary. She did say that to bake it longer, like 25-30 minutes.

Any frozen vegetable is going to come out mushier than if you roast it fresh. The freezing breaks down the cell walls. But maybe with Buster's teeth issues, softer is better.

Okra is soft, even at its "crunchiest."

ps, for my spicy fruit salad I fill a leakproof plastic tub, add slugs of cider/wine vinegar and extra virgin olive oil in roughly 1:2 proportion (rather than the vinaigrette proportion of 1:4 or 1:5) then take it to work for my lunch.
